Is Ricotta Cheese Aged?

Ricotta is a fresh cheese, rather than an aged cheese that is made from the whey portion of milk. It is traditionally used in Italian recipes such as lasagna. However, it is versatile enough to be used in dessert recipes such as cannoli. It is also a good source of calcium, protein and vitamins A and B. Since ricotta is a fresh cheese, it will not keep as long in your refrigerator as some other cheeses.
