Is Ricotta Cheese Unhealthy?
Ricotta is a soft cheese and soft cheeses are known to harbor bacteria, particularly if they are unpasteurized. This is especially important for pregnant women to note, as these bacteria can be harmful to an unborn baby. However, a pregnant woman may eat ricotta if the label notes that the cheese has been pasteurized. Even if pasteurized, as a precaution you should not use ricotta that has been in the refrigerator for more than three or four days.
