Is Rum Cake Alcoholic?
It is generally considered that most alcohol evaporates from foods, while they are cooked. However, that is not so. Recent studies showed that most or at least a significant part of alcohol is retained in cooked foods. Rum cake is not an exception to this rule and it is alcoholic. Foods baked for 15 minutes retain up to 45 percent of alcohol, the ones cooked for over 2.5 hours retain only 5 percent.
