Amylase is a kind of enzyme that breaks down starch into simple sugar. This enzyme is naturally present in our bodies. First it is given out in the human saliva so that the food can be easily digested in our body. Then it is excreted by pancreas that turns the starch into simple sugar diffusible in the blood. It is also used in dough for rising where yeast is also added. It can also be used as food additive. Abundant amylase can cause dysfunction in the body like it can cause pancreatic disorders, nausea etc.
